Trader Joe's Pineapple Fruit Spread
I know this seems odd, but fruit jelly, jam, spreads, and similar are great substitutions for syrup flavorings in a drink. I love this one from Trader Joe's because it already includes a hint of coconut which is perfect for this recipe.
If you don't have access to this ingredient, you can use another pineapple spread or jam. If you do, add in a teaspoon of canned coconut milk. That will give it that extra boost of coconut flavor that will be missing.Sweetened condensed milk
I wanted an extra bit of sweetness and creaminess in this drink, so I add a tablespoon of sweetened condensed milk. It really helps tie the whole drink together.
How to make it layered
It's simple to make this drink layered, beautifully showing off the pineapple, coconut milk, and matcha ingredients.
Next, combine the pineapple spread and sweetened condensed milk as the recipe below states, then spoon into the bottom of a glass.
On top of that mixture slowly pour about eight ounces of coconut milk. Now you have two layers.
To make the top matcha layer, you'll need to make a matcha cold foam. Next mix your matcha powder with the coconut milk, whisk together, and then froth. My favorite way to froth for a cold foam is with a French press, but you can use a whisk or a handheld frother too.
Pour the matcha cold foam on the top to create an amazing layered look.

While this drink has many similarities, it is a bit different. This drink doesn't contain ginger, but the Starbucks one does. This recipe tastes sweeter, creamier, and contains actual pineapple chunks. Overall it has more of a pina colada flavor than the Starbucks drink does.

Iced Coconut & Pineapple Matcha Latte
An iced latte reminiscent of a pina colada.
1/3 cup Trader Joe's Pineapple Spread
1 1/2 teaspoon sweetened condensed milk
12 oz coconut milk
2-4 tablespoons unsweetened matcha powder (Follow instructions on your package for how much to add)
Mix the pineapple spread and sweetened condensed milk together until combined well. Add to your beverage glass.
Whisk together the 12 oz of coconut milk with the matcha powder. Follow instructions on your matcha package for how much to add. (Typically 2-4 Tablespoons.)
Pour matcha coconut milk mix over the pineapple mixture and stir with a spoon until combined.
Add ice, give a quick stir and enjoy!
This makes a 16 oz drink.
Tip: Use a bubble tea straw to drink, so you can easily drink up the pineapple chunks on the bottom.
